I tweaked the recipe of this mashed potato casserole for a creamy delicious side dish that puts the STAR in starch. I didn’t follow the measurements for cream cheese and sour cream – I just kept adding until it tasted decadent enough for me. Also, amp up the spices. I added cayenne, and paprika. I also added a crunchy topping by mixing together corn flakes and melted butter. I put the topping on for the last 15 minutes of baking and I’m pretty confident it took this casserole to new levels.
