Mashed potatoes are a heavy, Winter food item, but if you add a ton of chives, they feel nice and Spring-y. This is how you make a seasonal ingredient work for ya. This side dish requires exactly 4 ingredients because I’m such a nice person and like making your lives easy.
Bring a pot of water to a boil and toss in largely chopped potatoes. i used red potatoes, but any kind will do. After about 10-12 minutes, they should be fork tender, so drain them and start mashing with sour cream to taste. I used about 5 oz of sour cream for about 12 red potatoes. (I think…I really wasn’t paying attention. Just add enough for it to look good.) Toss in some salt and shredded pepper jack cheese and keep mashing. I used about 1/3-1/2 of a block of cheese. Finally, snip a whole bunch of chives with some scissors and mash those in as well.
Serve with a steak and you’ve got one heck of a meal. Also, make that steak in a cast iron skillet because it gets a crazy good crust that way. I don’t know why it took me so long to figure that out, but I am now a better person having learned this trick of the trade.
