What goes better with tomato soup than grilled cheese? NOTHING. But I can’t really serve a vegetarian meal in my house so I had to add some meat somehow. The best way I found to do that was by adding some ground sausage.
Since I’m working with my tiny kitchen, I went the simple route of using pre-made soup. I love any that has the words “creamy” and “roasted” in the name. I happened to be using the Tomato and Roasted Red Pepper soup from Trader Joe’s that needs nothing more than to be heated up in a pot. First I browned sausage in a soup pot. Once that looks good, pour the soup on top of it til the whole thing is warmed through. Soup: done.
Next, cook your grilled cheese. I used white bread and a combination of 2 cheeses: sliced goat’s milk Dutch cheese and creamy Toscano cheese soaked in Syrah. Both melted nicely and the tanginess of the goat’s milk cheese worked well with the Syrah flavor.
Make sure you put lots of good butter in the pan and cook it nice and slow over low to medium heat. That’s how it gets that gorgeous crust on the outside.
This is essentially a meal for an 8-year-old, but the addition of sausage and use of fancy cheese makes it appropriate for grown ups. I can’t tell you how satisfying it was to eat a meal like this with a slight chill in the air. It is a downright perfect fall/winter meal. Oh and PS – it’s suuuuper easy to throw together on a weeknight.
FYI: Sauteed mushrooms would be great with this meal, either in the soup or inside the grilled cheese. I didn’t do it because I was lazy, but I have more faith in you.
