I followed this recipe. It required very few items from the store since it’s just pie crust, buttermilk, eggs, sugar, [a little] flour, vanilla (I’d use a bit more than suggested), and a lemon.
Even though the toothpick came out clean after 45 minutes (meaning, it was fully cooked), I found I preferred the texture when it got a bit more time in the oven.
This had way more lemon flavor than I anticipated – in a good way. It’s very similar to a chess pie…but I’m realizing my non-Southern friends may not know what that means.
My beau got his a little warm and topped it with blueberry cheesecake ice cream from our local scoop shop. Wow. What a perfect combo.
