Mediterranean Riced Broccoli

Here’s a surprise dish made from random ingredients I found in my fridge/freezer. You’ll only need 3 items and they can be found pretty much anywhere.

Start by cooking up some riced broccoli. Mine is from one of those frozen steam fresh bags. Cauliflower rice would work too. Heck, if you’re not concerned with carbs, go with real rice. GO WILD. If you’re using the frozen veggie based stuff, though, this whole thing takes a mere 5 minutes to make so there’s that. Once it’s microwaved up, toss your broccoli rice with chopped artichoke hearts and seasoned feta. (Or regular feta and you add your own seasoning like dried basil, cracked pepper, etc.) Done.
