Buffalo chicken wraps, salad…but what about rice bowls? If you take advantage of Trader Joe’s microwavable chicken thighs (in the refrigerated section), this is the quickest meal that is ultra satisfying.

Toss the microwaveable chicken thighs with your favorite buffalo sauce and serve them on top of rice. Of course you’ll need some other fixins, and I used leftover riasted cauliflower (seasoned with garlic powder, onion powder, salt, pepper, and a little smoked paprika), shredded carrots, and blue cheese. Easy and not fried, which feels like a big healthy win.
