Give leftover chicken some new life by tossing it with buffalo sauce…and supporting with all the fixins. This rice bowl has crunch, spice, and umami and came together in minutes.

I set some rice up in the rice cooker and cauliflower florets in the oven (all they need is a little oil, salt, and lots of pepper). Those two ingredients don’t even require you to get your hands dirty and will take between 20 and 25 minutes to cook, so I let them do their thing while I tidied up the apartment. The rest of this meal comes together in under five minutes so you can do some serious multitasking. I’ve done this with leftover chicken but also with Trader Joe’s microwavable sous vide chicken thighs (pictured). Once the chicken is warmed up, toss it with your favorite buffalo sauce. Other toppings include shredded carrots, blue cheese, and ranch dressing.
