Last time I wrote about tortellini with chicken sausage I told you it was a meal that could be easily adapted. Small changes make this feel fresh and new each time.
This go round, I used cheese tortellini with roasted garlic chicken sausage. I tossed the combo with red pesto sauce and wilted a full package of fresh spinach in there. Topped the whole thing with grated parmesan.
This was another winning combo that only took about 10 minutes to prepare. The red pesto is a nice way to mix it up from the standard green stuff and the fresh spinach adds some serious woodsy flavor. This is the perfect meal for cozying up in front of a good Netflix documentary.
