Per usual, with my beau out of town on business, I made myself a supper of tuna fish. I had tortillas leftover from Taco Tuesday so I decided to make a wrap. I wanted to mix things up a bit so I added some HEAT. Oo baby – if you can’t take the heat, stay outta my kitchen. That’s cheesy. I know.
First, mix a can of tuna with mayo to taste. This is normal. What’s less than normal is the Franks Red Hot (buffalo sauce) you’re going to mix in with it. Spread the tuna mixture onto the tortilla wrap. Top with shredded carrots, sliced bell pepper, and sliced avocado. Roll the whole thing up and enjoy!
I love that this is packed with veggies and no cheese. Buffalo sauce is actually super low-cal so this is a really healthy meal with tons of flavor. And so colorful! Any color bell pepper will work, but I love how the green looks against the bright orange carrots. This wrap results in a super pretty cross-section for those of y’all who eat with your eyes first.
HOT TIP: this works well with sriracha if you’re not into buffalo sauce.
