I started this meal thinking I’d be following a recipe…and then I just started dumping things into a crockpot. That’s what Slow Cooker Sunday is all about, right?
Simply put boneless skinless chicken breasts in a slow cooker along with grape tomatoes, lemon, a can of artichoke hearts (halved), olives, onion, bell pepper, and white wine. Season with salt and red pepper flakes. Cook on high for 3 hours. In the last hour, add in some corn starch so it’ll thicken up a bit. Serve over cauliflower rice (like I did) or regular rice.
