Work has been so crazy lately, but I’m finally starting to feel like I’m getting a handle on things, which is good since everyone seems to be falling into a rhythm now that school is back in session and those freewheelin summer vibes are fading. Our Labor Day weekend wasn’t anything groundbreaking, but we did manage to see friends at their pool, host a movie night for ourselves, and spend some time at the park. Lots of little activities to keep us busy – it felt nice and a perfect way to say goodbye to summer.

We had a pretty spectacular Taco Tuesday this week. It’s been a while since I made this carnitas recipe, though I’m not sure why since it’s so simple and is one of my beau’s favorites. I took it to a new level by making some quick-pickled red onion. The best part is that the carnitas were made in the slow cooker and the corn salad took 5 minutes to prepare so this was a particularly low-effort – rare for something so tasty.

It’s been a while since I ran more than two miles (the last time was 7/20 and before that was in June) so I was happy I pushed myself to run 3.25 miles yesterday and was rewarded with some pretty flowers on the way. My pace was pretty slow, but I did it and that’s honestly all I care about.

We received the best package in the mail this week! Sharon knitted us this gorgeous afghan that perfectly matches our living room. It is so unbelievably soft and ultra cozy. I hate the cold weather, but it will be so much more bearable now that I have this to snuggle up in.
